Our carbonation is naturally sourced from grapes, imparting a fragrant, artisanal touch—unlike conventional beverage-grade CO2 from chemical processing. The unique properties of gas from grape fermentation enhance its ability to bind seamlessly with Balbin water for a prolonged and refined sparkle. The presence of aromatic esters and terpenes elevates the sensory experience, interacting harmoniously with our water’s rich minerality to deliver a subdued aromatic surprise.

Our esteemed partner winery carefully guides the journey from vine cultivation and grape harvest to fermentation, ensuring the highest quality of CO2 sourced from grapes. The brilliance of a local innovative engineer has enabled us to capture and reuse this fermentation CO2, infusing its aromatic character in Balbin water to create a beverage that stands alone in its category.

We know exactly where our green CO2 comes from and it's only 40km away from the Balbin source! We partnered with the winery Patria-Kobyli to offset a portion of their emissions from the fermentation of their renowned Muller Thurgau grapes.

Pioneering a sparkling water revolution was not our goal, but a by-product of our relentless philosophy
The story behind Balbin is one of passion, persistence, and an unwavering commitment to quality. Dissatisfied with the flat, industrial taste imparted by conventional beverage-grade CO2, our founder embarked on a mission to find a better way. For half a year, she crisscrossed the country, visiting countless beverage manufacturers, only to be told the same thing—industrial CO2 was the standard, and no one offered an alternative.
Just when hope seems lost, a chance encounter led our founder to a hidden gem of innovation: a local technology manufacturer nestled among the vineyards of South Moravia. Here, a brilliant engineer had developed a system to capture and reuse CO2 released during the alcoholic fermentation of wine. No one had yet attempted to use this fragrant CO2 to carbonate water. Intrigued by the potential, our founder saw an opportunity to revolutionise Balbin sparkling water and so now we present it– a harmony between the world of wine and water.
